Following the feedback from the other recipe I put up, I thought I’d add another. This one needs slightly
more preparation in advance, but is utterly yummy!
Indian Chicken
- Chunks of chicken breast.
- Cherry tomatoes
- Onions (red or white or mixed), cut into chunks
- Peppers (1 each of red, yellow, green and orange), de-seeded and cut into chunks
- Tandoori or tikka seasoning (available in the spice section of supermarkets)
- Natural yogurt (large tub)
- Lemon or lime juice
- Seasoning
- Rice & salad to serve
Method
- Cut the chicken into chunks a little larger than the cherry tomatoes.
- Cut the peppers (de-seeded) and onion into similar sized chunks.
- Mix the tikka or tandoori spice mix into the natural yogurt to taste (I use around half a tub).
- Add around 2 tablespoons of the lemon or lime juice to the yogurt mix.
- Marinade the vegetables and chicken in the yogurt mixture over night.
- Place marinaded meat and vegetables onto a baking tray and grill until cooked. You will get some seared edges - don’t worry, it’s NOT burned, it’s meant to be like that!
- Serve on a bed of rice with an interesting salad, and/or naan bread.
- Enjoy!
P.S. A good dressing can be made using mint jelly and cream (I prefer reduced fat cream). Mix them together and use to dress the salad and for dipping poppadoms in!
